WHAT DOES THE PROCESS OF A TRUE CRAFT CHOCOLATE LOOKS LIKE?

 

 SOURCING

 

We source carefully selected quality cacao beans form farmers or reputable brokers

 

 

 

SORTING

We sort by hand all our cacao beans 

 

 

 

 

ROASTING

 

We created a unique roasting profile for each type of beans we source in order to get the best flavor out of the beans

 

 

CRACKING/WINNOWING

 

We gently crack the beans in our in-house made cracker

 

 

  We tune our winnower to obtain quality nibs with near zero percent husks

 

 

 

CACAO BUTTER EXTRACTION 

We extract cacao butter (if needed) from the the same bean to maintain true single originality  

 

STONE GRINDING

We stone grind for 72 hours for an ultra refined silky chocolate smooth texture

 

 

AGING

 We age our chocolates between 8 to 12 weeks depending on the origin

 

TEMPERING/MOLDING

All our chocolate is hand funneled in our clean molds

 

 

Cooling the chocolate molds

HAND WRAPPING/PACKAGING

 

After removing the bars from the molds we inspect every individual bar  

 

 

Then we foil wrap and package our chocolate by hand.
